Birthday Cake Season Is Here!

With summer birthdays at my house, I thought it’s the perfect time to share some of my favorite cake recipes—delicious, skin-loving, and plant-based. So whether you’re a chocolate lover or a berry fan, I’ve got a treat that’s packed with antioxidants and healthy fats to give your skin a little extra glow.

Let’s dive into two cake ideas to make your birthday (or picnic) extra special—and extra healthy!


For the Chocolate Lovers 🍫: Vegan “Glow-Up” Cake for Radiant Skin

This cake is the ultimate glow-up for your skin! It’s rich, creamy, and packed with healthy fats and antioxidants.

Ingredients
For the Sponge (Egg-Free & Plant-Based):

  • 200 g almond flour
  • 100 g spelt flour or oat flour (gluten-free: buckwheat flour)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp maple syrup (or date syrup)
  • 250 ml almond milk (or any other plant milk)
  • 1 tsp apple cider vinegar (it works like an egg!)
  • 3 tbsp coconut oil (melted)
  • A pinch of salt

For the “Glow-Up” Cream (Nourishing for Your Skin):

  • 2 ripe avocados
  • 3 tbsp raw cocoa powder
  • 2 tbsp maple syrup
  • 100 ml coconut milk (the thick part)
  • A few drops of lemon juice
  • A handful of blueberries or raspberries for decoration

Instructions

  1. Preheat your oven to 180°C.
  2. Mix the plant-based milk with apple cider vinegar and let it sit for 5 minutes.
  3. Combine the dry ingredients in a bowl. Add the wet ingredients and mix until smooth.
  4. Bake for about 30 minutes (until a toothpick comes out clean).
  5. Blend the avocados with cocoa powder, maple syrup, coconut milk, and lemon juice for a creamy filling.
  6. Once the sponge has cooled, slice it, spread the cream, and decorate with berries and dark chocolate.


For the Berry Lovers 🍓: Vegan Strawberry Cake for Glowing Skin

If you’re more of a berry fan, this strawberry cake is for you! Bursting with fresh fruit and hydrating coconut milk, it’s as good for your skin as it is for your taste buds.

Ingredients
For the Sponge (Vegan & Light):

  • 200 g spelt flour (or gluten-free: rice flour + potato starch)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp maple syrup (or date syrup)
  • 250 ml almond milk
  • 1 tsp apple cider vinegar (it works like an egg!)
  • 3 tbsp coconut oil (melted)
  • A pinch of salt

For the Strawberry Cream (Vegan & Fresh):

  • 200 g fresh or frozen strawberries (defrosted)
  • 200 g chilled coconut milk (just the thick part)
  • 1-2 tbsp maple syrup
  • 1 tsp lemon juice
  • 1 tbsp chia seeds (for thickening + omega-3s for glowing skin)

Instructions

  1. Preheat your oven to 180°C.
  2. Mix the plant-based milk with apple cider vinegar and let it sit for 5 minutes.
  3. Combine the dry ingredients in a bowl. Add the wet ingredients and mix until smooth.
  4. Bake for about 30 minutes (until a toothpick comes out clean).
  5. Blend the strawberries with coconut milk, maple syrup, and lemon juice for a smooth cream.
  6. Once the sponge has cooled, slice it, spread the cream, and decorate with fresh berries and coconut flakes.

Both of these cakes are perfect for summer birthdays, picnics, or just when you want something sweet that’s also nourishing for your skin. Whether you love chocolate or berries (or both!), there’s no reason why your dessert can’t also be a glow-up for your skin!
